I think Dan Schorr had some info on this on his old "Northern Wars" site. Maybe he will post something here.

IIRC the hussars had a single wing at this period...

Personally I'm looking for more info on how the rest of the Polish-Lithuanian cavalry and infantry were dressed.

For example, can I use Cossacks as the light cavalry?

I have PM-ed an amended version of the Wimmer list Dan has sent you. This is the Wimmer list adjusted to the probably size of the army at the battle.
I would be also very interested in this list. Does it consider latest research by Dr. Sikora ?
would the hussars still have had the wings
Impossible to determine but I would bet that they haven't.
