I have a book with more detailed photos of these uniforms and judging from those photos I would say the buttons are definitely shaped more like balls than pennies. The third uniform with pocket flaps that are identical with the later Carolean uniform might have sligthly flatter semi spheric buttons. Seen from the front they all look similar but in profile the other uniforms appear to be more ball shaped than the third one. But all that might be an illusion created by the angles from which they were photographed from. It is unfortunate that I did not pay closer attention to the buttons when these uniforms were on display in the Army museum a couple of years ago.
The way they are buttoned seems to be through buttonholes and not through loops of thread (if that is what "shanks" mean). The lower part of these coats and most of the pocket flaps have however false buttonholes. Together with the accompanying buttons these were purely decorations and had no practical purpose.

Thanks Tacitus,
was sent an image of a 'Spanish' button, do you think they could resemble something similar to this?
